3つとも賛成の表現ですが、度合いが異なります。I completely agree は相手の言ったことすべてに完全に同意することを意味し、最も強く、中立的な表現なのでどんな場面でも使えます。You've got a point は親しみやすい表現で、相手が言ったことの一部(1つの点)に納得したときに使います。I see what you mean は柔らかく中立的で、言いたいことは理解でき部分的に納得していることを示し、後ろに小さな「but(でも)」が続くことがよくあります。

Not "I completely agree, but the price is too high." — say "You've got a point, but the price is too high.". 相手の意見すべてに賛成するときだけ I completely agree を使います。一部にだけ納得して「でも…」と続けたいときは You've got a point を使いましょう。
